The potatoes are washed and boiled in their skins, in salted water. After boiling, pass through a stream of cold water and clean. We cut the potatoes into pieces, not too small.

We clean the fish from the skin and bones and cut it into pieces.

Mix the potatoes and smoked fish with the cleaned and finely chopped onion.

Make mayonnaise from 1 egg yolk, mustard and oil and add it to the salad. Mix well and add salt if necessary. Taste beforehand because it might be quite salty (the fish is salty!)

Place on a plate and garnish with olives.
