Chocolate and coconut muffins with buttercream or ganache topping
Chocolate and coconut muffins with buttercream or ganache topping. Cupcakes with chocolate and coconut milk (or condensed), with butter cream or mascarpone topping. I think they are the most chocolate muffins I have ever made! No baking powder obviously. These chocolate muffins are tender and moist, like a Negro.
The other day I had dear guests from Germany, and March & # 8211 16 year old (daughter of the invited family) really wanted to make cupcakes with me. Marta follows all the posts with passion Urban Flavors and he prepared some recipes! He showed me pictures of macarons made by her and looked great! He basically wanted a workshop with me :).
After we got up from the table (we served them with Ottolenghi's eggplant and a steak of pork breast flour with golden potatoes and pickles in summer) we both went to the kitchen. We warmed up our aprons and got to work.
I improvised this recipe for chocolate cupcakes, taking care to write down all the ingredients and preparation steps & # 8211 so that we can reproduce it here, on the blog. Together we did 24 muffins (2 trays of 12 pieces each).
In a bowl put the cheese, cream, sugar, vanilla sugar, eggs and salt. Mix all ingredients for about 2 & # 8211 3 minutes. It is ideal to use the mixer. Then add the corn flour. Leave the composition on the table for 30 minutes for the cornmeal to penetrate. Then we put the baking powder. Stir again.

As long as the summer lasts. Here's the news we've all been waiting for
Once the composition is ready, we prepare the muffin holder. It would be good to use a silicone muffin tin. Put the tray in the preheated oven for 25 & # 8211 30 minutes, until the muffins are nicely browned.
After removing the muffins from the oven, let them cool a bit, after which we can serve them. Optionally we can sprinkle powdered sugar or melted chocolate on top.
